Stripe takes the payment on its own pages, so a card number never reaches your server. The shop works the total out again before anything is charged, and VAT can be added automatically wherever you are registered.
A printed hoodie, a mug off your own shelf and a download can all go in the same order. Each one is charged and sent the way it should be.

The software is yours and it keeps running. What needs maintaining are the connections out to other companies. Printful, Printify, Gelato, Stripe and your web host all change things on their own schedule, and none of them ask us first. Updates carry those changes to your shop before anything breaks.
They add and retire endpoints with little notice. An install left alone for a year or two will eventually stop syncing, or stop passing orders through.
Every host does it eventually, and software that has not kept up stops working the day it happens.
